Have you ever had one of those really simple recipes that was just… SO GOOD you cannot believe it? This apricot chicken is one of them. Five ingredients, one dish, unbelievably good. Unlike other recipes that go by the same name, it’s not made with preserves, which I think come up too sweet for a meat dish. Instead it uses apricot nectar, which you will most likely find in the ethnic food aisle. Bonus: most of the ingredients are pantry ingredients, so you can keep them on hand and have this as an “emergency” meal for those nights when things don’t go as planned. (Yeah, I know… who has those, right? Ha.)
To cook this for two, use two boneless, skinless chicken breasts and halve the other ingredients.
Apricot Chicken
Ingredients
- 3 lbs skinless chicken thighs
- 3 cups apricot nectar
- 1 cup water
- 1 medium onion chopped
- 2 pkgs Good Season's Garlic and Herb Dressing mix
Instructions

Combine all ingredients in a baking dish. Bake at 350 degrees F for 1 hour or until done. Serves 2.
Recipe Notes
If you have 12 oz cans of apricot nectar, use two. You can substitute 1/4 cup dried onion flakes if you don't have a fresh onion. You can also use ranch dressing mix- whichever one is available.To cook in the crock pot or slow cooker, cook on low for 4-6 hours.
There is a fair amount of "sauce" in this dish, and it pairs nicely with green vegetables or salad. Apricot is a flavor that goes over well with kids, too!
